Cheers | To Bonny (again!)

As promised, today I have the second installment of cocktails inspired by Bonny’s liquor cabinet.

When Karen and I were brainstorming ideas, she said she had that Malibu Rum in her cabinet, too, because it was a necessary ingredient in one of her favorite vacation cocktails, a Charleston Sunset from Fleet Landing (in Charleston)

Fleet Landing uses Peach Schnapps, which Bonny doesn’t have, but Karen substituted a little syrup from a can of peaches and declared it a success.

Sunset Cocktail
(inspired by Fleet Landing)

1 oz vodka
1 oz coconut rum
1 oz pineapple juice
1 oz orange juice
1-1/2 oz cranberry juice
1/2 oz peach juice (from a can of peaches)

Fill a glass with ice. Add all the ingredients and stir.

Our fourth suggestion was the hardest to pull off – because we had a really hard time finding ginger apple cider. My sister finally tracked down a six-pack of cans (made locally – who knew?!). She tried a version of our cranberry mule, but it wasn’t good. I tried a simpler version and think it works. Honestly, the ginger cider is not my favorite and I’m not sure if it’s ginger cider in general, or just this one… so I’m sharing the recipe – thinking that if you like ginger cider, you’ll enjoy it!

Cider Mule

1 oz vodka
6 oz ginger cider
1 lime wedge

Fill a glass with ice. Combine the vodka and cider. Squeeze in the lime wedge and then it add to the glass. Stir just to combine.

  2. I'm reading this at 10:30 am, which is a little too early for a cocktail, but as soon as the sun is over the yardarm (research tells me that's ~11 am!) I'm mixing up a cider mule! I will probably go get a can of peaches and/or peach schnapps this afternoon so I can enjoy my sunset cocktail along with sunset this evening. You had a great idea, and you and Karen have really outdone yourselves. Many thanks to both of you!

  3. You might be getting requests from all of us! 🙂 I might have a bottle of coconut rum (something parrot, I think) and could easily get small boxes of juice to make the Sunset cocktail. You and Karen are quite the duo!

  4. I just about have time to open a bottle of wine right now, but in another week when things open up a little I plan to give a few of these cocktails a try. The Sunset Cocktail will be added to my list. : )
